Yule Log Cake (Easy with Puff Pastry)

I’ve tried and failed several Yule Log Cakes over the past several years and this year I was determined to make one, no matter how I managed to pull it off. My solution? To just use puff pastry. Sure, it’s not technically a “cake” but it’s in a spiral and it turned out delicious.

Ingredients:

  • Puff pastry sheets

  • 1/4 cup of white sugar (Optional: an additional 1-2 tablespoons of brown sugar)

  • Cinnamon to taste (I really just eyeballed it)

  • 1/4 stick of vegan butter, melted

  • Powdered sugar for dusting on top

  • Optional: any other additions such as dried fruits, nuts, chocolate, or anything that sounds good to you. I chose crushed walnut

Preheat oven to 400F. Combine your sugar(s) and cinnamon. Roll out the puff pastry. Very lightly butter the side facing up to give your cinnamon sugar mixture something to hold onto. Spread out your cinnamon sugar mixture onto the lightly buttered puff pastry. Sprinkle any additional ingredients such as nuts, chocolate, or fruits.

Slowly and as tightly as you can, roll your puff pastry. This can be easier if you transfer it onto your baking sheet ahead of time so you don’t have to relocate it after rolling. Placed your spiral log into the oven for 15-20 minutes or until a nice golden brown. Remove from the oven and let cool for 5-10 minutes on the hot pan (this can help it finish cooking in the center).

If you’re worried about how it looks, don’t fret just yet! The final step is to dust it with powdered sugar, which gives it that freshly fallen snow look (and will cover up if it looks a little too done on the top as mine did.

Add any other edible embellishments as you’d like to dress it up! I dressed my plate with some fresh rosemary sprigs. You can also surround it with other edible plants, flowers or fruits. Then it’s time to serve and enjoy!
