Mabon Apple Cake

This cake is a much smaller, vegan adaptation of another blog’s recipe. If you’d like to make a larger quantity or not make the vegan substitutions, you can follow the original creator’s recipe here.

Cake:

  • 1 cup diced apples

  • 2/3 cups sugar

  • 1/4 cup apple sauce

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon vanilla extract

  • 1/4 cup melted butter

  • 3/4 cups flour

  • 1 tablespoon nondairy creamer or alt milk Splash of vanilla extract

Topping

  • 1/2 stick butter

  • 1/4 cup brown sugar

  • 1 tablespoon nondairy creamer or alt milk

  • Splash of vanilla extract

Add sugar and eggs to mixer. Whisk until blended. Add in baking soda, salt, vanilla and melted butter. Gradually mix in flour. Once fully combined, fold in the diced apples. Place in greased pan (this makes a very small cake, I used a 9x5.5 baking dish) and bake at 325F until lightly golden and a toothpick comes out clean. Baking times will vary depending on how thick the cake mix is spread out (anywhere from 30 minutes to an hour) so watch closely.

When the cake is almost done make the topping. Start by melting the butter in a pan on the stove. Add brown sugar and creamer/milk. Cook until it comes to a boil and remove from the heat. Stir in the vanilla extract. When cake is fresh out of the oven, poke holes all over it with a skewer or other pointy utensil and then pour the hot liquid topping over. Let it sit until absorbed.
